Kiwanis Family Luncheon
Mediterranean Chicken: Chicken breast served over linguine with garlic, sundried
tomatoes, mushrooms, artichoke hearts and spinach. Topped with roasted
garlic beurre blanc.
Braised Beef Tips: Angus beef braised with mushrooms in a rich stock with a hint
of burgundy. Served with Wisconsin white cheddar and whipped potatoes.
Herb Marinated Grilled Vegetables: Marinated and grilled zucchini, yellow
squash, mushrooms, sun-dried tomatoes, and red onions. Served with a
cauliflower risotto and tomato saffron sauce.
President’s & Parent’s Banquet
Chicken Florentine: Lightly breaded chicken breast stuffed with spinach, bacon
and boursin cheese. Served with a fine herb cream and golden rice pilaf.
Apple Pork Loin: Brown sugar cured pork loin stuffed with green apple and
pecan cornbread dressing, topped with caramelized apple and cranberry
apple sauce. Served with Wisconsin white cheddar and chive whipped
potatoes.
Pasta Primavera: Spinach fettuccini sautéed with broccoli, asparagus,
mushrooms, zucchini, artichoke hearts and sun-dried tomatoes, tossed in olive oil
fresh basil and garlic.
